- 1 tbsp (15 mL) minced fresh ginger
- 2 cloves garlic, minced
- 1/2 cup (125 mL) orange juice
- 3 tbsp (45 mL) hoisin sauce
- 2 tbsp (30 mL) sodium-reduced soy sauce
- 2 tsp (10 mL) cornstarch
- 1/4 tsp (1 mL) hot pepper flakes
- 2 tbsp (30 mL) oil
- 6 oz (180 g) extra-firm tofu, cubed (about 1/2 package)
- 3 cups (750 mL) broccoli florets
- 2 carrots, sliced
- 1 large yellow or red bell pepper, thinly sliced
- 8 oz (227 g) chow mein noodles or rice vermicelli noodles, cooked
- Chopped peanuts and microgreens for garnish, if desired
Cooking Instructions
Toss cubed pork with ginger and garlic; set aside.
Whisk orange juice, hoisin, soy sauce, cornstarch, and hot pepper flakes together; set aside.
In a large non-stick skillet, heat oil over medium-high heat. Sauté tofu for about 3 minutes, turning once until golden and remove to a bowl. Add broccoli, carrots, and bell pepper to same skillet and sauté for 4 minutes or until broccoli starts turning bright green; add to bowl with tofu.
Add pork into skillet and sauté for about 4 minutes or until browned. Add tofu and vegetable mixture back to skillet. Reduce heat to medium-low and pour sauce over top, stirring to coat well. Cook, stirring for about 2 minutes, or until thickened and well coated. Spoon over noodles to serve. Sprinkle with peanuts and top with microgreens, if desired.

Stir-fry is meant to be flexible! Swap in the vegetables that you like or have on hand. No broccoli? Try cauliflower. Love cabbage? Add it in place of bell pepper.
