Bacon in Canada typically refers to side bacon, which is cut from the pork belly, cured and smoked. It is available in regular or thick sliced.
What is known as “Canadian bacon” is back bacon and made from cured lean pork loin and is not smoked. Peameal bacon is also cured pork loin that is rolled in cornmeal. It is available sliced or whole and is leaner than traditional bacon.

cooking Methods
Air Fryer
Arrange side bacon, peameal or back bacon in a single layer in the air fryer basket. Set temperature to 375°F (190°C); cook for 7 to 9 minutes (12 to 14 minutes for thick sliced), flipping halfway through cooking. Transfer to a paper towel lined plate.
Air fry a whole peameal “roast” at 350°F (180°C), flipping roast occasionally for 50 to 60 minutes, or until the internal temperature registers 160°F (71°C).
Oven
Arrange sliced side, back or peameal bacon in a single layer on a parchment paper-lined, rimmed baking sheet. Bake in a 375°F (190°C) oven, flipping once during cooking, for 15 to 20 minutes or until it reaches preferred doneness.
For whole roasted peameal, place roast in a parchment-lined dish. Add a glaze such as maple syrup if desired and roast for 20 to 25 minutes per pound or until the internal temperature registers 160°F (71°C).
Broiling bacon is faster than roasting but requires careful monitoring. Set oven rack about 6 inches (15 cm) from broiler. Set broiler to High and cook side or back bacon slices for 3 to 4 minutes per side or until cooked to preferred doneness.
Stovetop
Arrange strips in a single layer in a large skillet. Add enough water to fully cover bacon (this helps bacon cook more evenly and reduces splatter.) Bring to a boil over medium-high heat. Once water has evaporated, reduce heat to medium and cook, turning bacon occasionally for 3 to 5 minutes or until it reaches preferred crispness.
Pan-fry peameal or back bacon in a lightly oiled skillet for 2 to 3 minutes per side over medium heat.
