Ingredients

Sheet Pan

  • 10 pork sausages, sliced (about 1 lb / 454 g
  • 1 lb (454 g) Brussels sprouts, halved
  • 1 medium red onion, cut into wedges (about 5 oz / 140 g)
  • 2 tbsp (30 mL) olive oil
  • 1 tbsp (15 mL) balsamic vinegar
  • 1 tbsp (15 mL) maple syrup
  • 1 tsp (5 mL) salt
  • ½ tsp (2.5 mL) black pepper

Maple Tahini Sauce

  • 3 tbsp (45 mL) tahini
  • 1 tbsp (15 mL) maple syrup
  • 1 tbsp (15 mL) apple cider vinegar
  • 1–2 tbsp (15–30 mL) warm water
  • Salt and black pepper, to taste

Garnish

  • 2 oz (57 g) goat cheese, crumbled
  • 1 tbsp (15 mL) fresh parsley, chopped

Cooking Instructions

Step 1

Preheat the oven to 425°F (220°C). Dice the sweet potato, halve the Brussels sprouts, and cut the red onion into wedges.

Step 2

Transfer the vegetables to a large baking sheet. Add the olive oil, balsamic vinegar, maple syrup, salt, and black pepper. Toss well until the vegetables are evenly coated.

Step 3

Spread the vegetables into an even layer and roast for 25 minutes, stirring halfway through, until they begin to caramelise and become tender.

Step 4

While the vegetables roast, slice the pork sausages into bite-sized pieces.

Step 5

Remove the baking sheet from the oven and add the sliced pork sausages to the roasted vegetables. Toss everything together and return the pan to the oven for 12–15 minutes, or until the sausages are cooked through and lightly browned.

Step 6

Meanwhile, prepare the maple tahini sauce by whisking together the tahini, maple syrup, apple cider vinegar, warm water, salt, and pepper until smooth. Add additional warm water as needed to reach a pourable consistency.

Step 7

Remove the sheet pan from the oven. Sprinkle the goat cheese over the hot vegetables and sausages, then garnish with the chopped parsley.

Step 8

Serve warm with the maple tahini sauce drizzled over top or on the side.

TIP:

Cut the vegetables into similar-sized pieces so they roast evenly. Spread the vegetables in a single layer on the baking sheet to encourage caramelization instead of steaming. If your baking sheet is crowded, divide the ingredients between two pans for the best browning. Add the goat cheese while everything is still hot, so it softens slightly without completely melting. The maple tahini sauce can be prepared a day in advance and stored in the refrigerator. Stir in a splash of warm water before serving if it thickens.
