Cooking Method:

Ingredients

  • 14 oz (400 g) pork belly slices
  • ⅓ cup (100 mL) light soy sauce
  • 2 tbsp (30 mL) mirin
  • 1 tbsp (15 mL) honey
  • 2 garlic cloves, minced
  • 2 portions (about 3 cups / 450 g) cooked short-grain rice
  • 2 egg yolks
  • 1 tbsp (3 g) finely chopped chives

Cooking Instructions

Step 1

Cut the pork belly slices into 1 cm (½-inch) cubes.

Step 2

In a small bowl, whisk together the light soy sauce, mirin, honey, and minced garlic until well combined.

Step 3

Heat a large non-stick frying pan over medium-high heat. Add the pork belly and cook for 5–7 minutes, stirring occasionally, until browned and the fat has rendered.

Step 4

Transfer the cooked pork to a plate, leaving the rendered fat in the pan.

Step 5

Pour the soy sauce mixture into the same pan. Simmer over medium heat for 2–3 minutes until the sauce has thickened slightly.

Step 6

Return the pork to the pan and toss until every piece is evenly coated in the glossy glaze.

Step 7

Divide the warm cooked short-grain rice between two serving bowls. Spoon the glazed pork over the rice and drizzle any remaining sauce over top.

Step 8

Place one egg yolk in the centre of each bowl, garnish with the chopped chives, and serve immediately.

TIP:

Cook the pork in a single layer to achieve a golden, caramelized exterior. Then simmer the sauce only until it lightly coats the back of a spoon to prevent it from becoming too salty. Adding freshly cooked short-grain rice gives the bowl the best texture and absorbs the glaze beautifully. Mix the egg yolk into the hot pork and rice just before serving for a rich, silky finish. Garnish with toasted sesame seeds or sliced green onions for extra flavour, if desired.
